Olluco is a tuber originating in the Peruvian highlands and southern Bolivia and Ecuador. Its harvest is carried out twice a year and the greatest production is found in the regions of Cusco, Apurímac, Puno, Huánuco, Junín, Huancavelica, Chilca and Ayacucho. 
 
 Likewise, the tuber is more than ten thousand years old in Peru and is part of the historical past and its ancient gastronomy. However, in recent years, the urban population displaces this tuber, full of proteins.
